San Diego no longer has one bakery scene. It has several: naturally fermented
bread shops, ambitious laminated-pastry counters, Mexican panaderías, Cuban
pastry, celebration-cake specialists, and bakeries whose best items emerge on a
timed oven schedule. A useful citywide ranking has to compare those traditions
without pretending they all make the same thing.
That is why the old version of this list changed so much. Wayfarer now ranks
first on the strength of the most complete bread-and-pastry program. Relic, Hans
& Harry's, La Moreliana, The French Oven, Con Pane, and Secret Sister repair
major omissions. Bread & Cie is now the first established alternate: its current
bread case remains real, but consistency and value no longer outrank the final
twelve. Valerio's National City history remains important, but the exact branch's
current consistency was not strong enough to preserve a citywide rank.
What “best” means here: execution leads, followed by current consistency,
category fit, distinctiveness, value, service and logistics, and local relevance.
Review count adds nothing. Multi-location brands can rank but cannot become
number one. A great cake bakery is not punished for being different from a bread
shop, but a narrow program does not receive the same category-fit credit as a
complete one.
