Ed Fernandez in Nestor serves the best single thing you can eat in this county, and it is birria — the meat, a bowl of broth beside it, and a room full of people who all made it there before the 2pm close.

Nothing else here looks anything like that, which is the honest state of eating in San Diego. Twelve orders that between them take in the border, the Pacific, a Filipino steam table in National City, a Hawaiian counter in Ocean Beach, a butcher in Cardiff, and a pie shop an hour inland. Several of them get eaten standing up in a parking lot. Two of them — carne asada fries and the California burrito — were invented in this county rather than imported and improved.

The dessert is a drive. Julian is a whole Saturday rather than a stop, and that turns out to be the correct amount of effort for the pie.

Do not try to run all twelve in a day. Fries go soft, sushi rice goes cold, aguachile stops being cold at all. Pick two that are near each other and give them the afternoon.

Birria the way it is supposed to arrive: a bowl of dark consomé next to the meat, a stack of handmade corn tortillas, onion and cilantro and lime alongside. You build a bite, dip it, eat it, start again. The beef gives way without any argument and the broth has been going long enough to taste like a decision rather than a byproduct. This is a small South Bay dining room that draws a serious morning line, and the line moves. Come before noon and let one bowl turn into two hours.

Tacos El Gordo — Adobada Taco

Adobada comes off a vertical spit that has been turning all day, shaved straight onto a handmade tortilla and finished with onion, cilantro and salsa. It arrives sweet and charred and fatty at once, and it is small enough that nothing can hide behind anything else. Learn the system before you walk in—each meat has its own line and its own person, and adobada is the line you want. The guacamole and the salsas are worth the extra reach. Order two, eat them standing, and the room at midnight makes sense.

The battered fish taco at the original Bonita Road counter is the Baja version built at the right scale—crisp shell, hot moist fish, cabbage, crema, salsa, and enough lime to wake the whole thing up. Nothing on it is doing decoration work. While you are there, the smoked tuna and the shrimp ceviche are the other reasons regulars keep this counter to themselves. It is a small room that runs on counter rhythm rather than table service, so order, take a stool if one is free, and eat it hot.

Humberto's Taco Shop — Carne Asada Fries

San Diego invented carne asada fries, and the Golden Hill counter still builds them so you can tell the layers apart: seasoned asada, fries with enough structure left to pick one up, cheese, crema, guacamole, pico and salsa going all the way down instead of sitting on top. It is a full order for two people. It is also at its best about 40 seconds after it leaves the window, which means you eat it right there, standing, while it is still too hot to be sensible about.

Cardiff Seaside Market — Cardiff Crack Tri-Tip

Burgundy-pepper tri-tip is the real name. Cardiff Crack is what everybody in North County actually calls it, and one bite of the sandwich explains the nickname faster than any amount of arguing about it. The marinade is sweet and hard-peppered and the beef still tastes like beef underneath. Get the sandwich if lunch is the point. Buy the marinated tri-tip raw from the butcher counter if you want to run the fire yourself—that is the version people drive up the coast for, and the market around it earns the extra ten minutes.

Sushi Tadokoro — Local Uni Nigiri

Uni is one of the ingredients this coast is known for, and Tadokoro is where to meet it—a small Edo-mae counter in Old Town where the rice gets treated as seriously as whatever is sitting on top of it. The house pairs uni with ikura as a signature, and when local urchin is in, that is the bite to ask for. Season and supply decide that, not the menu. Take it inside the progression rather than as a cold opening mouthful, and let the counter tell you what you are eating.

Tita's Kitchenette — Dinuguan

Dinuguan is the order if you want National City to explain itself in one bowl—pork stewed dark in its own blood until it comes out savory and tangy at the same time, thick enough that plain white rice stops being a side and turns structural. It is the boldest thing on the steam table and the one most worth being brave about. Point at it, then add sinigang if there are two of you eating. Go earlier in the day, while the steam table is still deep.

The California burrito is San Diego's own invention, and JV's is where the ratio actually holds. Carne asada seared hard, fries that still taste like potato, cheese, crema and guacamole, wrapped tightly enough to survive the second half without collapsing into starch. It is enormous, but the size is not the trick—the trick is that everything in there is still identifiable at the last bite. Ask for the salsa on the side. Then eat it within ten minutes of leaving Morena Boulevard, standing up, no plate.

Mariscos Mi Gusto Es — Aguachile Verde

Aguachile verde is the sharp end of San Diego's Baja inheritance—shrimp, lime, and a green chile heat that arrives immediately and does not apologize for itself. The Home Avenue truck makes it to order, so it lands cold and loud and completely fresh, and the ceviche and mixed tostadas are the same argument in a quieter register. If you want something fried alongside, the battered fish tacos and the gobernador hold up. Eat it right there in the lot, in whatever shade you can find.
