Cowboy Star is the best steakhouse in San Diego, and the butcher shop attached
to the dining room is the reason. The beef is broken down, aged and cooked by
the same people in the same building — 21 days on the core cuts, 35 on the
ribeye they built their name on.
The rest of the list scatters: downtown, Little Italy, University Heights,
Carmel Valley, Hotel Circle, and one across the bridge in Coronado where the
menu names the ranch. Prices scatter with it. At one end your potatoes come on
the plate. At the other, Japanese wagyu is priced by the ounce and a core steak can
run past $150 with nothing next to it.
Two of the seven add a 4% surcharge to the check, one charges $85 to open a
bottle you brought, and one has a dress code it enforces. All worth knowing
before you book rather than after.
Book earlier than feels necessary, order the cut you could not make at home,
and let somebody else worry about the fire.
