The name is a nod to Prohibition, which was historically called "the Noble Experiment," and the bar takes the era seriously. It sticks to pre-Prohibition-era spirits for historical accuracy, so there's no vodka. The room has a Gothic look, with red neon, brass skulls and a chandelier, so you'll have plenty to point at in the first five minutes.

The move is a bartender's-choice cocktail, built to your taste. Tell them what you like and let them take it from there. Custom drinks and knowledgeable bartenders come up again and again in the praise, and watching a drink get built around your answers makes one round feel like something you did together. If you'd rather point at a menu, it has included a Pickle Brine Aperol Spritz, a Tom Collins and an Air Mail.

The planning piece is getting in. Noble Experiment doesn't take general reservations. Entry is first come, first served for walk-ins, and groups of four or more have a separate way to reach out. That uncertainty is the main thing keeping it out of the top four. Have a backup in mind, since downtown has plenty of other bars nearby, and if the room is full, picking the next spot together makes a pretty good first-date test anyway.

Kindred in South Park is a heavy-metal-themed vegan restaurant and cocktail bar, and it's the clearest pick on this list for a plant-based date or one where somebody isn't drinking. Founder Kory Stetina opened it in 2015 in partnership with CH Projects' Arsalun Tafazoli, and the room is as dramatic as that sounds: plants everywhere and a death-metal theme.

The theatrical room can feel busy and seating is limited, so Kindred sits a few spots below the quieter wine bars. It's a great call when you both like a little theater.

Finca is a North Park wine bar, restaurant and bottle shop on North Park Way, made for two people who like choosing together. It opened on February 8, 2024, from Dan Valerino and Joe Bower, the former general manager and sous chef of Wine Spectator Award-winning Juniper and Ivy, with restaurateur Ricardo Dondisch as a partner. The three of them also run a hospitality management company, Bottle Boon.

The wine list leans toward Spain and California, which hands you a ready-made first question: Spanish or Californian tonight? Pick a glass or a bottle together from the current list. Neither of you has to be an expert, and comparing notes is half the fun.

Finca's setup gives a first date options. There's the restaurant side, the bottle shop and a wine club, so you can browse bottles to take home, sit down for a glass, or let that glass turn into dinner. That flexibility earns it a spot just ahead of Bivouac. The format is smaller and simpler than the bars above it, a good fit for a date where the conversation can carry itself.

Bivouac Ciderworks turns the first round into a tasting. Order a flight of contrasting ciders at this North Park cider brewery and restaurant on 30th Street, compare reactions, and you've got a conversation going before anyone has to share a five-year plan.

The story behind it is a good one. Longtime friends Matthew Austin and Lara Worm founded Bivouac in 2018. Before cider, Worm was a federal prosecutor in Washington, D.C., working violent-crime and homicide cases at the Department of Justice. A boating accident in 2013 broke her back, and in 2014 she came back to San Diego and traded law for cider.

The original North Park space is a 2,500-square-foot cider brewery and restaurant built around an "explorer meets decadent foodie" theme, and the Bivouac Adventure Lodge later expanded the concept next door. There are 24 rotating cider taps pouring small-batch cider made on site, plus a full comfort-food menu, cocktails, wine and outdoor dining. If one of you turns out to be more of a cocktail person, there's a plan B on the menu.

Cider lands in the top eight because it's a low-stakes shared tasting, and an easier first meeting than the bigger production at Raised by Wolves. At peak North Park hours the room turns food-forward and lively, so an earlier start or a weeknight helps if you want to talk. Bivouac is closed Mondays, and Friday and Saturday run later.

Raised by Wolves has the best entrance on this list, and it might as well have been built for first dates. Inside Westfield UTC in University City, you walk into a fine-spirits shop, then step onto a fake stained-oak fireplace, two at a time. A few things to plan around, and they're why it sits at No. 9. There's no food, so eat before or after at one of the other UTC restaurants. Mall parking and the occasional wait take some patience, and it's a pricier, more polished night than most of this list. There's a way to reserve, and it's worth using, though walk-ins depend on space.

The shop keeps its own hours, separate from the bar. If the timing lines up, browsing the bottles together after your drinks is a nice way to stretch the night a little.

Clos Wine Shop is a small wine shop and bar on Park Boulevard in University Heights, and it's one of the most conversation-friendly rooms on this list. It's co-owned by Juerie Masters, who came to it from the wine and spirits business, and her husband, Paul.

Every bottle is tasted before it's added to the shop, and the focus is low-intervention, organic and sustainably farmed wine. The range covers sparkling, rosé and a spread of regions, so ask for a by-the-glass recommendation and let that be the first shared decision of the night. The shop also carries tinned fish and mussels, which make a very good excuse to share a snack.

When the weather's nice, look for the shaded patio with hanging lights and grapevines. Reviews for Clos are about as glowing as they get on this list, which says a lot for a shop this size.

It sits at No. 10 because seating is limited and the lineup is more focused than at the bigger bars above it. That also makes it a smart choice for a planned, intentionally short first date.
